mac n' cheese

1 tbsp. butter
1 tbsp. flour
pinch salt, pepper, and paprika
1 cup milk
1 cup cheddar cheese

Stir butter and flour in pan over medium heat until butter is melted and you make a paste.


Add in 1 cup milk slowly with constant stirring.  Add some salt, pepper, and paprika.  Just add a pinch or two of each.  Stir out clumps and continue stirring until sauce thickens.  Should take ~5 to 10 minutes.  You want the white sauce to coat the back of the spoon.



Still some clumps here, but that's alright.  Turn off hear.  Stir in 1 cup finely chopped or shredded cheddar cheese and stir until all the cheese melts.



Toss in some whole wheat pasta tubes or pour some cheese sauce over some pasta.  Delish!



The sauce might look a little thin here, that's because I used 2 cups milk (whoops).  Still tasted great!
